If you love bold flavors and crispy tacos, these Crispy Crockpot Buffalo Chicken Tacos are about to become your new favorite meal! The slow-cooked buffalo chicken is packed with a smoky-spicy kick from chipotle peppers, then baked in cheesy, golden tortillas for the ultimate crunch. Serve them with my Creamy Jalapeño Dip for the perfect balance of heat and coolness.

This easy recipe is perfect for busy nights - just toss the ingredients in the crockpot, shred, and bake!
Ingredients
2 lbs boneless, skinless chicken breasts
1 cup Frank’s Buffalo Hot Sauce
2 tbsp butter
2 chipotle peppers, chopped
Salt & pepper, to taste
12 small tortillas (flour or corn)
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
Olive oil, for brushing
Fresh cilantro, for garnish
Green onions, for garnish
For Serving
Remaining buffalo sauce from the crockpot
Instructions
Step 1: Slow Cook the Buffalo Chicken
1. Add chicken breasts, buffalo sauce, butter, chopped chipotle peppers, salt, and pepper to the crockpot.
2. Cover and cook on low for 3-4 hours or high for 2 hours, until the chicken is tender and easily shreds.
Step 2: Shred & Sauce
3. Remove the chicken from the crockpot and shred using two forks or in a stand mixer.
4. Pour some extra buffalo sauce from the crockpot over the shredded chicken and mix well.
Step 3: Assemble the Tacos
5. Preheat the oven to 425°F.
6. Brush one side of each tortilla with olive oil and place that side down on a baking sheet.
7. Fill each tortilla with a layer of shredded cheese and buffalo chicken, then fold in half.
Step 4: Bake Until Crispy
8. Bake for 10 minutes, then flip and bake for another 5 minutes, or until the tacos are crispy and golden.
Step 5: Garnish & Serve
9. Top the tacos with fresh cilantro, jalapeños, and chopped green onions. Drizzle Jalopeno Ranch over the top.
10. Serve with my Creamy Jalapeno Dip and extra buffalo sauce from the crockpot for dipping.

Tips & Variations
Want it extra spicy? Add an extra chipotle pepper or a drizzle of extra hot sauce before baking.
Need a milder version? Use mild buffalo sauce and reduce the chipotle peppers.
Make it even crispier! Bake an extra 2-3 minutes per side for a crunchier shell.
