1 tbsp olive oil
1 lb. ground beef
1 packet taco seasoning
1 (15 oz) can corn kernels, drained

1/2 cup tomato sauce
1 (7.5 oz) tube buttermilk biscuits, cut into quarters
1½ cups shredded Mexican cheese blend
Fresh cilantro and avocado, for topping

Preheat your oven to 350°F.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add ground beef and cook until browned, crumbling it as it cooks. Drain any excess fat.
Stir in the taco seasoning, then add the black beans, corn, enchilada sauce, and tomato sauce. Mix well to combine.
Gently stir in the quartered biscuit pieces and ½ cup of shredded cheese, making sure everything is well coated.
Sprinkle the remaining 1 cup of cheese over the top.
