If there’s one dinner I can always count on when I need something fast, comforting, and guaranteed to be eaten by the whole family, it’s this Easy One-Pot Salsa Chicken.

Golden-brown baked chicken with melted cheese in a white dish, fresh from the oven on a metallic stovetop, creating a warm, appetizing feel.

It’s the kind of recipe you throw together in five minutes, pop in the oven, and somehow it comes out tasting like you spent way more time than you actually did. No pre-cooking, no extra pans, no complicated steps - just a baking dish and a handful of ingredients.

This is one of my go-to meals for:

  • busy school nights

  • last-minute dinner plans

  • or when I simply don’t feel like cooking

And the best part? It’s endlessly customizable and pairs perfectly with classic sides like Mexican rice and corn.

It’s cozy, cheesy, and has just enough flavor to feel exciting without being spicy (especially if you use mild salsa for kids).

Easy One-Pot Salsa Chicken

Ingredients

  • 3–4 chicken breasts

  • 1 packet taco seasoning

  • 1 packet ranch seasoning

  • 2 (15.5 oz) jars salsa

    • I use medium for a little heat

    • Use mild for kids

  • ⅔ cup guacamole salsa or salsa verde

  • Shredded cheese (pepper jack + cheddar recommended)

Directions

  1. Preheat oven to 350°F.

  2. Add chicken breasts to a large baking dish.

  3. Pour in both jars of salsa and the guacamole salsa.

  4. Sprinkle taco seasoning and ranch seasoning evenly over the top.

  5. Gently mix everything together until chicken is fully coated.

  6. Top generously with pepper jack and cheddar cheese (shredded or sliced).

  7. Cover tightly with foil and bake for 40-45minutes. Until internal chicken temperature reaches 165 degrees.

  8. Remove foil and continue baking until cheese is fully melted and bubbly.

  9. Optional: Broil on low for 1–2 minutes for a golden, bubbly top.

Let rest 15 minutes before serving.
