Ingredients
12 hard-boiled eggs, cooled and peeled - cut in half
½ cup mayonnaise
1 tbsp Dijon mustard
Salt and pepper, to taste
Paprika, to taste
2 drops orange food coloring
Fresh chives, cut into small “stems”
Instructions
Hard-boil your eggs:
Start by boiling your eggs, then transfer them to an ice bath to cool completely. Once cooled, peel each egg carefully.
Slice + scoop:
Cut each egg in half lengthwise. Gently remove the yolks and place them into a mixing bowl. Set the whites aside.
Mix the filling:
Mash the yolks with mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth and creamy. Add 1–2 drops of orange food coloring and stir until you reach the perfect pumpkin-orange hue.
Pipe the pumpkins:
Spoon the filling into a piping bag (a plastic zip-top bag with the corner snipped works great!). Pipe the mixture back into each egg white, creating a slightly mounded pumpkin shape.
Add the stem:
Top each deviled egg with a small piece of fresh chive to mimic a pumpkin stem. Optional: use the tip of a butter knife to create small indent lines for a pumpkin look.
Serve + enjoy:
Arrange on a platter and watch these little cuties disappear!
