Grilled Chicken Caesar – Juicy, Flavorful & So Easy!

If you love Caesar dressing, you’re going to love this Grilled Chicken Caesar! The secret? Marinating the chicken in a couple of spoonfuls of my homemade creamy Caesar dressing before grilling. This adds rich, garlicky flavor and keeps the chicken juicy and tender.


Tonight, I’m serving this grilled chicken with pesto tortellini and asparagus for a fresh and delicious dinner. But the best part? This chicken is so versatile! Serve it over a crisp Caesar salad, in a sandwich, or as part of a grain bowl—there are endless ways to enjoy it.



Ingredients


For the Homemade Creamy Caesar Dressing (Makes Extra!):

• 1 cup mayonnaise

• ½ cup sour cream

• ½ cup finely grated Parmesan cheese

• 1 tbsp fresh lemon juice

• 2 tsp Dijon mustard

• 1½ tsp anchovy paste

• 2 tsp Worcestershire sauce

• 4 garlic cloves, grated or finely chopped

• Freshly ground black pepper and a pinch of salt, to taste



Instructions:

1. In a medium bowl, whisk together all ingredients until smooth and well combined.

2. Taste and adjust seasoning if needed.

3. Cover and refrigerate for at least 30 minutes before serving.


(Store extra dressing in an airtight container in the fridge for up to a week!)


For the Grilled Chicken Caesar:

• 2 boneless, skinless chicken breasts

• 3 tbsp homemade creamy Caesar dressing

• 1 tbsp olive oil

• 1 tsp salt

• 1/4 tsp pepper


Instructions


Step 1: Marinate the Chicken

1. In a bowl or zip-top bag, combine the chicken breasts with Caesar dressing, and olive oil.

2. Toss to coat evenly and let marinate for at least 30 minutes (or up to 4 hours for extra flavor).


Step 2: Grill the Chicken

1. Preheat your grill or grill pan over medium heat.

2. Remove the chicken from the marinade, letting any excess drip off. Season with salt and pepper

3. Grill for 5-7 minutes per side, or until the internal temperature reaches 165°F.

4. Let the chicken rest for 5 minutes before slicing.


Step 3: Serve & Enjoy!

• With Pasta: Serve the sliced grilled chicken alongside your favorite pasta and roasted or grilled veggies for a complete meal.

• As a Salad: Slice the chicken and serve it over romaine lettuce with extra Caesar dressing, croutons, and Parmesan.

• As a Sandwich: Serve the grilled chicken on toasted garlic bread with romaine and a drizzle of Caesar dressing for an epic sandwich.
