When I first moved to Florida, everything was new - new surroundings, new routines, and most importantly, new faces. Adjusting to a different place can feel overwhelming, but sometimes, life has a way of gifting you exactly what you need at the perfect time. For me, that gift came in the form of my friend Jade.

After meeting Jade, we quickly bonded over our love for food. In a world that often feels too busy and disconnected, we found solace in the simple act of sharing a meal. A simple gesture of weekly plate exchanges of homemade delights grew our friendship one week at a time. Feeding people is a true love language of mine and it was so nice meeting someone who was just as passionate about the culinary life as I am.

Servings: 3-4 (Easily double or triple this recipe to accommodate more)


Ingredients:

  • 1 cucumbers, diced

  • 1 large tomatoes, diced

  • 1 jalapeños, finely chopped (seeds removed for less heat)

  • 2 tbsp red onion, thinly chopped

  • 2 tbsp fresh cilantro, chopped

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Juice from 1/2 of a lemons

  • 1 ripe avocados, sliced

Instructions:

  1. Prepare the veggies: Wash and dice the cucumbers and tomatoes into bite-sized pieces. Finely chop the jalapeños after removing the seeds for a milder flavor. Thinly chop the red onion and fresh cilantro. Transfer all the veggies to a large mixing bowl.

  2. Toss the salad: Gently toss the diced cucumbers, tomatoes, jalapeños, red onion, and cilantro together until evenly combined.

  3. Season to perfection: Season the salad with salt and pepper to taste, adjusting the seasoning according to your preferences. The salt will help bring out the flavors of the veggies, while the pepper adds a subtle kick.

  4. Dress it up: Drizzle the olive oil and fresh lemon juice over the veggies. Toss the salad once more to coat the veggies evenly with the dressing.

  5. Serve and enjoy: Transfer the Garden Medley Salad to a serving dish or individual plates and garnish with chopped or slices of avocado. Serve immediately Or chill in the fridge for a couple hours. Savor the burst of freshness with every mouthful. Serving chilled is the best to enjoy this refreshing simple salad.
